



Put water, sugar, salt and butter in a small saucepan. Bring to a boil, then add flour and stir vigorously until it forms a ball. This should take less than a minute. Place in a small mixing bowl with a paddle attachment (ex: Kitchen Aid). Mix for one minute until cool. Next, at a slow speed add eggs one at a time until incorporated. At this point you should have a thick paste.
Pipe out paste with a pastry bag fitted with a star tip (number three or four) on a lightly greased sheet pan or parchment paper into rings or 3 ½ strips. Fry in canola oil heated to 350°. Turn once until light, golden brown. Drain well and dredge in cinnamon sugar (1 teaspoon of cinnamon to a ½ cup sugar). Serve with chocolate sauce or dulce de leche if desired. Enjoy!
